Smoked Salmon and Broccoli Muffins

Smoked salmon & egg muffins - Copy


  • 50g smoked salmon
  • 1/2 small broccoli head, chopped
  • handful of fresh dill
  • 5 eggs, whisked
  • 1 tsp. Lucy Bee Coconut Oil , melted
  • Lucy Bee Himalayan Salt and ground black pepper, to season


  1. Preheat the oven to 180C, 350F, gas mark 4.
  2. Grease a cake tray with Lucy Bee Coconut Oil.
  3. Whisk together the Lucy Bee Coconut Oil and eggs, then season.
  4. Place a small piece of broccoli into each muffin case, followed by salmon.
  5. Pour the egg mixture over and bake for 20 minutes.

A Juice of Beetroot, Celery, Carrot, Apple, Pear, Spinach and Lemon Juice

Stuffed Mushrooms with Cherry Tomatoes

Tomato Stuffed Mushroom


  • 4 large flat mushrooms
  • Cherry tomatoes, halved. You need enough to fill the mushrooms
  • A pinch of Lucy Bee Himalayan Salt and ground black pepper
  • A handful of chopped chives
  • 1 tsp. Lucy Bee Coconut Oil


  1. Preheat the oven to 180C, 350F, gas mark 4.
  2. Cut the stalks out of the mushrooms and fill with the halved tomatoes.
  3. Sprinkle over with the chives and Lucy Bee Himalayan Salt, ground black pepper and a little ball of Lucy Bee Coconut Oil.
  4. Bake for about 30 minutes.


Classic Tomato Soup Lucy Bee Style

Classic Tomato Soup


  • 2 sticks of celery
  • 2 carrots
  • 1 red onion
  • 600g organic chopped tomatoes (tinned is fine)
  • 180g Greek yoghurt
  • 500ml vegetable stock
  • 1 tbsp. Lucy Bee Coconut Oil
  • Lucy Bee Himalayan Salt and ground black pepper, to season
  • 2 - 3 tsp. honey (optional)


  1. Sauté the celery, carrot and onion in Lucy Bee Coconut oil for 10 minutes, or until soft.
  2. In a heavy based saucepan, add the chopped tomatoes, Greek yoghurt and vegetable stock. Stir together.
  3. Add the sautéed vegetables to the tomato mixture. Season and blend in a food processor until smooth.

Afternoon Snack

Hummus with Carrot and Cucumber Sticks


Fish with Herb Crust and Anchovies


  • 175g fish - I used cod loin but would work well with any firm white fish or salmon
  • 120g gluten free breadcrumbs
  • 30g parsley (with stalks)
  • 30g Lucy Bee Coconut Oil
  • 1 tin anchovies
  • Ground black pepper


  1. Preheat the oven to 180 C, 350F, gas mark 4.
  2. Line a baking tray with silver paper.
  3. Add all of the topping ingredients to a blender and blitz.
  4. Place the fish onto the baking tray. Cover with the breadcrumb mixture.
  5. Bake for 18 to 20 minutes. The fish should be flaky when cooked.

Pasta with Anchovy and Tomato Sauce

Pasta tomato & anchovy



  • 10g Lucy Bee Coconut Oil
  • 2 garlic cloves, finely chopped
  • 1 x tin anchovy fillets
  • Big bunch parsley, chopped
  • 1 x 400g tin chopped organic tomatoes
  • Lucy Bee Himalayan Salt and freshly ground black pepper
  • Handful of grated parmesan (optional)
  • Pasta of your choice - i use Rizopia organic brown rice pasta


  1. In a heavy based saucepan add the Lucy Bee Coconut Oil, anchovies plus oil and garlic. Sauté until the anchovies have broken down and garlic just lightly coloured.
  2. Stir in the parsley and seasoning.
  3. Stir in the tomatoes and cook uncovered over lowest heat for at least 30 minutes, stirring occasionally - I often put mine into the oven on a very low setting.
  4. Serve over pasta adding parmesan, if required.
